Vegetarian Kelp( seaweed) Mushrooms Soup

Once a week on Tuesdays I stick to a vegetarian meal for the whole day! This is what I cooked for myself for a nourishing “entree” Vegetarian soup prior to Vegetarian rice with lots of different nuts cooked with Turmeric powder.

My soup dish is mainly boiled with soaked dried Kelp (seaweed) and soaked Shintake’mushrooms, soaked dried Bean-curd(Haricot Caille Seche) and lots of sliced fresh Ginger!

Added a teaspoon of some vegetarian powder and seasoned the soup to taste with some tasty Brewed Light Soy Sauce. Served with a dash of white ground pepper for that aroma of fragrance to my nostril, as I took my first sip of it!

Lovely simple nourishing soup that I enjoyed, knowing also that I had taken in some natural forms of mineral salts, calsium and some source of vegetable protein for the day, and this is just the “entree” Soup of my Day!

When you wish to buy Rambutans, always choose the ones that are brightly coloured! The “redder” the Rambutans, you can be certain they are riper and sweeter ones than those that are lighter in colour!

The flesh of the Rambutan inside is opague in colour and it is firm, with a seed inside which is unedible! Rambutans can be eaten fresh at room temperature or preferably chilled. They can successfully be added to a Mixed Fruit Salad, with their seeds removed if served to little Kids!

Savoury Porridge

On a hot Summer morning, I cooked this Delicious Savoury Porridge.

Using “broken” rice grains especially ideal for cooking Porridge, I simmered the rice with lots of water until it became gruel porridge!

When I was young, about 10 year years of age, I used to walk to the Morning Asian Markets on a Saturday morning and sit on one of the wooden benches there and ordered such delicious fare! The Porridge Man asked me politely what type of raw ingredients I would like him to stir into his small pot after he scooped some plain porridge from a huge “stock-pot,” which he kept simmered over a Charcoal stove! He only used Clay-stoves with flames that leapt out on the pot from burning charcoals!

It was so interesting to sit and watch him cook a large bowl of Porridge just for me only! I liked my Porridge topped up with an egg cracked into it and stirred briefly!  Oh yes! That was was his “speciality” he did to every customer, that “seeked him out,” in the marketplace in my hometown in Malaysia.

The price for a large bowl of Delicious Chicken/Meat Porriage was only Malaysian forty cents! To-day a bowl of Porriage would not be less than Aussie 6 dollars in Sydney.  Now, that is a Great Inflation of Commodities!

Hello! It’s Nancy writing about this delicious Egg plant dish!

Whenever I cook Egg-plants, I always “salt it out” first!
How to? After cutting them up to which ever way you want them to be cooked, I would soak the pieces in lots of salted water with Rock Sea Salt until the water becomes brownish in colour and discard water and rinse and fill up with clean tap water and leave till ready to cook.

Another method which lots of Italians and Lebanese do, is to cut or slice them up and sprinkle salt on the suface until it “sweats” and soak up the salty liquid with Kitchen paper towels before cooking them!

Egg-plants come in all sizes, shapes and a few coulours! Some are round like little tomatoes, some big round and elongated, some long and slim!

Plenty of dark purple ones around, light bluesh purple, purle and white in beautiful stripes and even creamish in colour! Whatever shapes and sizes they come in, they are very tasty Fruit Vegetables! Fruit here does not mean that one can eat them raw as a fruit!

This is easy to cook! It has a very typical Malaysian Nonya flavour!
Irisstable! Sourish, Sweet, Hot and Spicy! Deliciously Tasty!

Ingredients used in the this Stir-fry: Olive oil, Egg-plants, garlic, crushed chillies, tarmarind juice, fresh ginger, palm sugar, Dark Soy sauce, Light Soy sauce and pinch of Celtic Salt, some water.

Dried Prawns that had been soaked same time whilst preparing Egg-plants.

You can omit the Dried Prawns if you are a Vegetarian.

This Flavoursome dish is best accompanied with Steaming Hot Jasmine Fragrant Rice! Of course, with other Protein dishes as well for your Enjoyment!

Malaysian Vegetarian Curry

In Malaysia there lots of Indians from the Southern parts of India who had migrated and are Malaysian locals now with some Pakistani too and some traders from Mumbai, India and many from Punjab as well. Indians also migrated from Sri Lanka, called Ceylon before and their famous Tea are grown in Cameron Hylands, Malaysia to-day.

Being a Multi-Cultural Society, naturally the locals also cook this type of soupy or “watery” hot curry! Majority of Hindu Indians are raised as vegetarians due to many reasons and I don’t have to go into that as this is my foodblog!

In this Southern-styled or Malaysian Indian Curry, I had cooked the curry the normal way and added in some presoaked Dried Guten, peeled Carrot pieces and sliced Cauli-flowers! However, some individuals are allergic to gluten, while the Chinese had no probelms at all? I grew up eating it with no problems, thank God!

When all the ingredients got simmered in the Curry, they turned up very Delicious and Aromatic! Oh! I love this any Time, any Day, Everyday….with a dash of Soya Sauce!!!  Trully Goode’! this Malaysian Indian curry, Please try_, you must!   Oh Yes!!!

Gluten for Protein, Carrot for Vitamin A and Cauliflower for Vitamin C.
All vegetables rich in Vitamins and Mineral Salts as well. Fiber-rich, full to Goodness Curry!

Turmeric powder used in Curry Powder, very potent Anti-oxydants! Good for your General well-being!  Eat more CURRY!
Indians eat all sorts of Curries everyday! Tasty and Delicious, but can be Hot for Some!    ” Suit Yourself!”

Curry can be served with Steamed Rice, Rotis, Toast, Lebanese bread, Burritos etc.

Please yourself!

Best recommend and safe to Cook, using Stainless Steel Pots, Clay-pots or Enameled Pots instead of aluminium when simmering sour curries!

Fresh Soft Kuey Teow Soup with Soy Chicken

This dish tastes so Tasty & Delicious and suitable for a light lunch.

Boil up a simple stock base soup, eg. from chicken bones or anchovies.

In the clear soup or stock, you add in some Fresh Flat-Rice Sheet Noodles that you can buy from the Grocery shops! They come in a big slab and you slice them up. Add some green shallots to the Soup and top it up with any cooked meat or Chicken piece or slices. Add few drops of Sesame oil.Season with salt and pepper.

Serve with slices of Lemon and Sliced Chillies with Soya Sauce.
Bon Appetite!!!

Last Tuesday, I cooked something vegetarian for myself!

Main dish was firm Tofu with Braised Mock Duck and Fermented Chilly and Black Beans, quickly stir-fried with Olive Oil.

I had some Steamed Rice with Fresh Pineapple cubes and some Spices with Bay leaves cooked in it. Lovely aroma in my kitchen!

Used Shallots as Garnish on dishes.

Sweet Potatoes steamed in my Taboubi pot without any water made a perfect lunch for me.

After having cooked this vegetarian dish, I mashed some up some and toasted a “scone” bread to a lovely crust.

I then spread some Olive table spread on it for extra flavour and then my Delicious Spread on it! Yummy!

You can serve the rest of this dish as one of your main dishes at your table at lunch-time or dinner-time as well.

Black-eyed Beans and Black Urid Dhall are a Rich Source of Vegetable Protein. It goes well with Steamed Rice, Indian Rotis, Lebanese flat breads etc., Chinese Flaky Pancakes. The lists just goes on!
