Before it got dark last Friday evening, I decided to hurry to the Fish shop to buy some fish to cook for dinner. The shops are 15 mins, walk for me as I am bit slow!
Yes, that would be like doing a brisk exercise for myself too, as I really needed it!
So, off I went with a new sling-bag over my shoulders so my hands can be free to walk more comfortably!  On the way I met a neighbour walking towards me with her friend. We greeted each other and when I said I was off to get some fish before the shops closed, she asked me how would I cook it. I replied I could cook them in many different  ways. Foe example in a Fish Curry I could add in some “Ladies’ fingers,” or Orkra and also some Egg-plants or Brinjals into it!  “Oh! I will view them to-night,” she exclaimed as I hurried away, after informing her of the site of my new Food-blog.
However, when I started to cook, I decided to use what ingredients that were available to me!
The indredients I had used were:-
1 tablespoon Olive oil
1 chopped garlic
1 thinly sliced Spanish onion
2 tablespoons sliced fresh ginger
1 small can pickled Chinese Mustard vegatable
1 tablespoon fermented Soya beans and Black beans with chillies
1 small can pickled Chinese Mustard with chilly
1 tablespoon soft brown sugar
2 tablespoons Soy sauce
2 Limes, one cut into slices for garnish and 1 for juice
1 red hot chilly, (opt.)
2 -3 cups water
Method:-
4 fillets of Spanish Mackerel, cleaned, drained and sprinkled with some salt.
I heated up my Dutch oven pan and saute’ garlic, ginger, onion and added in the fermented beans and added some water to let it come up to a boil. Add in brown sugar.
Add in the fish and cook them on one side and turn over to cook them on other side. The whole cooking of fish time would be approximately 15mins. on high heat.  Add water gradually if needed at this stage.
Add Thick Black Soya sauce (ketcup manis) and Soya sauce to taste.
Add 1 thinly sliced chilly into pan, if desired . Pour in Lime juice and dish  cooked fish out onto serving platter to serve as a main with Steamed Rice.
Garnish with slices of Lime and few Basil leaves.
