Nancy's house Pumpkin Fried Rice with Prawns

Wash and soak 1 tablespoon dried prawns.
Clean and shell, devein green prawns.

Pound 2 cloves garlic, 1-2 hot bird-eyed chillies with 1 teaspoon Prawn paste(Belachan), remove onto dish.

Lightly pound soaked dried prawns.

Slice up thinly Spanish onion.

The 2 eggs shown here has been fried into Omelette as shown in previous blog.

Heat up 1 tablespoon Olive oil and fry pounded ingredients and sliced onions until aromatic.

Pour in green prawns and stir fry for 3 mins.

Lastly add in Pumpkin Rice and stir until fairly dry, gently without breaking up too much of cooked pumpkin.

Add in seasoning to taste, example soya sauce, salt, dash of pepper for extra spicyness. As you like it!!!

You can garnish now with thickly or thinly sliced Omelette and add some steamed vegetables to go with it!

Makes the dish more Nourishing and more Colourful as well!
